American consumers tend to avoid gluten-containing food products at a rate far exceeding the frequency at which celiac disease or non-celiac wheat sensitivities are thought to exist. Wrapped up in this trend is the perception that today’s wheat, specifically its gluten, is less healthy to consume compared to wheat from a century ago. Join Dr. Brett Carver as we take a closer look at what has changed in the wheat we eat, and how it might be changed for the better.
